Good Eating Mullet !! Do not underestimate how good eating mullet are. Steamed or poached with some shoyu mixed sauce, ginger and parsley (optional). Finish it off by pouring the hot peanut oil all over it... Hoooooweeee!!

Here is a good example of "well kept fish". 8 of these mullet were caught the day before and the rest caught the morning that this picture was taken. Without adequate ice, or the fish sitting in melted ice water, it would be a lot more noticeable to which fish were caught before the other. When it's hard to tell, it is a good sign that the fish was cared for well and the fish meat will be of good quality. Unless it's hard to tell cause they all look shitty.

Mullet is one of the best fish to learn how to clean and gut. Scales come off easy and they don't have a lot of bony fins to poke your hands. They do however have lots of "shit" in their stomach as do most limu (algae) eating fish. Makes for messy and stink hands if you don't wear gloves while gutting these fish. It's all a part of fishing. Enjoy!

FISH FAT If you look at this photo and the previous photo. There is a white textured layer within the cavity of these mullet. It's fat. Fish fats are a great source of omega 3 oils and they definitely add a richness to the taste of the fish. Rinse it well and mix it with the meat when the fish is being eaten. For those who know... it is definitely something to be happy about. :)

Ipo (12 weeks old) Just 12 weeks old and pointing! Nice to have a strong bloodline. Interesting to have a prime example of a genetically transferred behavior, such as pointing. Ipo is a German shorthair pointer in the solid liver color. Nice puppy, Can't wait to see him in the mountain!

Even in this black and white photo, you can see the eye clarity on this ahi. a very good indicator into a well iced fish, There are other indicators such as firmness, smell, temp etc. This fish is well within the range of being delicious! Yeah!!!

The process is not too complicated but... It still takes some time and effort. ie: after getting the meat (buying or hunting). cut in strips, add sauce marinade or dry ingredients for your recipe, cut the fire wood, smoke the meat, let it cool, bag it. That's a quick rundown of the process, like we said.. Its not complicated, but it ain't exactly "Easy". Sausage is even more labor intensive. So appreciate it when you get to eat some ;)
